This is a very interesting, and full of insight, question.  I am a vegetarian and became so without wanting to be one.  Being born and raised in Puerto Rico, I became a big fan of spam with rice and beans.  But then, as I started doing Kundalini Yoga, somehow, and without an active attempt at it, I started turning more and more towards non-meat-chicken, and even non-fish plates.  So the first step at making the switch is to not force yourself.  Just let it happen gradually.  Now remember, you become a vegetarian because it is your choice, not because you have to, or because a "religion" or a "system" demands you do.  In this way, you will be in control of your mind. 
 
Remember there are many and plenty vegetarian books out there but, they may confuse you, so, I recommend you stay simple at the beginning.
 
The most basic vegetarian diet schedule I can give you is, and almost embarrassingly so, too simple:  
Breakfast: Cereal with soy milk, or a bowl of fruits and juices, oatmeal.  I like crackers with cheese too (I include cheese in my diet).  You may also get Kosher cheese.  Remember true Vegans don't consume milk products nor eggs.  I recommend you don't worry about this for now.  The important thing is that your system gradually turns towards the detoxifying effects of no meat/chicken/fish.  Later on, you will see how easy is to not want to eat meat. You will go "yack" upon the sight of meat.  But take it slow, with no hurry.
Snacks:  you can do crackers, fruits, melons, bananas, etc.
Lunch:  Greens, of your choice, and plenty of them. You may add different types of beans if you wish (garbanzo, kidney, mung{Yogi Bhajan's and Solstice's favorite}, hummus.
Dinner:  Greens again!  Or, Rice with mung beans, Pita bread. 
Tofu is a great staple since it is so versatile and easy to cook/eat.
And lots of tea (you may get Yogi Tea). 
 
That is for now.  As you have seen, there is almost no cooking involved yet.  I cook very little at home since most of what I eat can be easily prepared without heat, or maybe using a small pot.  The important thing is to go slow in the transformation process.  Later on you can start getting "mystic" and start cooking "esoteric" plates for you and your family.
 
The Kindling Yoga Kriyas will definitely prepare you body for the distinctive energy you will get.
